Let it be CooperSmith's..
Here we go. It's day 6 of NaBloPoMo and we are continuing my theme of things for which I am thankful. I hope you are enjoying this as much as I am.
Yesterday we talked about the great state of Colorado and I mentioned that I spent 4 years going to school at CSU in Fort Collins.
Fort Collins is a great town, recently named Money magazine's Best Place to Live 2006. Like most good college towns there is plenty of shopping, music venues, arts and cultural events, restaurants, and of course bars.
But Fort Collins has something special when it comes to bars - or more specifically brewpubs - CooperSmith's Pub & Brewing.
Located in the historic old town area, CooperSmith's was one of the first bars I found and quickly became a favorite of mine.
I'm not really a party bar kind of guy. Places like Fort Ram and Washington's were the popular hang outs and I visited each of them just once in those 4 years. Too loud, too crowded, and bad cheap beer.
Me, I much preferred the smaller pubs and local hangouts, a place to chat with friends and enjoy good food and drink.
And the drink doesn't get any better than at CooperSmith's Pub & Brewing . With a brewery right on site, they feature a wide assortment of hand crafted brews all on tap. All of them are good (outstanding really) but I found one that stood (a frothy) head and shoulders above the rest - Horsetooth Stout. Served at the perfect temperature and in a perfect pint, it is as they say "an acquired taste for the traditional American beer drinker but soon becomes a favorite for the adventuresome."
A favorite indeed!!

Coopersmith's became a frequent hang out and over the course of those 4 years, I enjoyed many a fine pint there. A group of us adopted it as our default Monday night get together place, and I may have occasionally gone there a couple of times during the week after classes. No one called me by name when I walked in the door but nearly all the wait stuff knew my standard order (the aforementioned Horsetooth Stout and a plate of Fish & Chips)
Most of all though, I have great memories of time spent with friends there. Chatting until closing, sharing a dessert, enjoying some music (a fine singer / guitarist whose name I just can't recall right now). The great food and drink were just a bonus - and that is why CooperSmith's (and their Horsetooth Stout) take a spot on my list of things for which I am thankful.
When we were there last September, I think we ate every meal there, along with our after dinner drinks.
